Vegetarian Lentil Loaf with Tomato Glaze

Vegetarian Lentil Loaf with Tomato GlazeMeatloaf was my favorite meal as a kid, especially mom’s recipe.  I would even help out in the kitchen to get some of mom’s meatloaf!  When I turned to a mostly vegetarian diet, I didn’t expect any kind of loaf in my future.  Meat imitations often times fail.  They simply don’t, and won’t, taste like the real thing.  I was hesitant to try a loaf recipe, however, my love for lentils has grown exponentially in the last few years.  I decided to give a lentil loaf a try and we found another keeper for the rotation!  My vegetarian lentil loaf with tomato glaze tastes nothing like meat (and shouldn’t), but is delicious on it’s own accord. It’s hearty, wholesome, and healthy! Continue reading

Blueberry Chia Seed Jam

Homemade Blueberry Chia Seed JamI dislike grocery shopping when the store is really busy.  There are people all over the place, you can never weave your way through the aisles. Beer Battered String Bean Fries

Beer Battered String Bean FriesLast week I was poking around on my pinterest account finding and sharing ideas for recipes.  I came across a recipe for crunchy green bean fries that were coated in panko bread crumbs.  In the past, I have tried something similar with asparagus, and it’s not so easy.  Panko does not stick well to skinny vegetables, but it sticks very well to your fingers!  When I picked up my CSA this week and saw that I had string beans to use, I just knew I had to try and make a fantastic fries recipe!  The seasoning is just right on these beer battered string bean fries! Smoked Jalapenos in Carolina Mop SauceIf you have been a reader for very long, you have probably picked up on the fact that I love to eat smoked foods.  Which is sort-of different for someone that doesn’t eat meat (besides fish anyway).  I put this smoked tofu recipe into lots of dishes.  I love smoked trout, and use it in everything from salads, dip, sushi, and savory pancakes.  Well, here is another food I like to put on the smoker.  Smoked Jalapenos in Carolina Mop Sauce will blow your socks off! Garlic Lemon Roasted Broccoli

Garlic Lemon Roasted Broccoli

In my quest to eat healthy foods, I have realized how important a healthy and delicious vegetable side dish can be.  Side salads were once a favorite of mine, with a quick homemade vinaigrette.  However, most lettuces don’t have the nutrition and fiber content that we look for in vegetables.  Chopped salads with lots of veggies are time consuming for a simple side.  This garlic lemon roasted broccoli dish is simple, delicious, and healthy! Cherry Almond Oatmeal Cookies

Cherry Almond Oatmeal Cookies _2

I have a serious problem with good deals at the grocery store.  When I find a good deal, I can’t leave it there.  Luckily, I don’t have the same problem with other things, like clothes or shoes, just food.  Probably because I get so much more enjoyment out of food.  Well, a few weeks ago I found a great deal on dried cherries.  After much deliberation, I decided that cookies were the answer to my deal find.
