Simply Marinated Tempeh for Salads Sandwiches and Wraps

Simply Marinated Tempeh for Salads Sandwiches and Wraps by Alison's AllspiceThis simply marinated tempeh can be used in all sorts of ways.  I like to use it for salads, sandwiches and wraps.  The marinade is made from fridge and pantry staples so it is easy to whip up when you are planning on the fly.

Cubes are best for salads, but slices are best for sandwiches.  For wraps, you could go either way, but I prefer the slices. Continue reading

Lemon Feta Vinaigrette

Lemon Feta Vinaigrette by Alison's AllspiceI love to add feta to my salads.  Especially when I use a vinaigrette, the feta adds something creamy.  I often find myself dumping tons of feta onto my salad because I want a little feta in every bite.  This lemon feta vinaigrette solves that issue.

The feta is blended right into the dressing so end up getting a little bit coating every leaf and vegetable in your salad.  It turns into a less is more situation. Continue reading

Garlicky Kale Caesar Pasta Salad

Garlicky Kale Caesar Pasta Salad by Alison's AllspiceThe first time I came across this idea to turn Caesar salad into a pasta salad, it was in a cooking magazine.  After a quick google search, it appears that I am behind in the game because kale caesar pasta salad is definitely a thing already.

I tried to make mine a little bit different by adding more garlic, and skipping the croutons, using only pasta in my pasta salad.  Also, I added red cabbage for a splash of color. Continue reading

Radish Carrot and Arugula Chickpea Salad

Radish Carrot and Arugula Chickpea Salad by Alison's AllspiceI whipped up this radish carrot and arugula chickpea salad on a whim one day, just using up what was in the fridge.  It was so good that I had to make it again to and share it with you all!

Chickpea salads are so simple and easy to make, they are a favorite go-to for me. I often make salads in advance for workday lunches.  If you want to prep this salad in advance, don’t mix in the arugula until you are ready to serve.  Continue reading

Fried Chickpea Gyro Salad

Fried Chickpea Gyro Salad by Alison's AllspiceWhen I first stared to eat more plant-based meals, I can across a recipe (now long lost) that marindaded and fried chickpeas.  It is such a simple process that completely transforms the humble chickpea.  Here I use a gyro inspired marinade to make fried chickpea gyro salad.

I have posted a very similar recipe before, my fried chickpea gyro bowls, made with a base of rice, chopped vegetables, and tzatziki sauce.  While I love grain bowls, I was craving a salad this time, so I adapted the recipe. Continue reading

Roasted Beet and Chickpea Salad

Roasted Beet and Chickpea Salad by Alison's AllspiceI have not always liked beets.  I think the first few times I had beets as an adult, their flavor was misrepresented as being all-together earthy and bitter.  Yes, beets can be earthy, and sometimes bitter, but they can also be subtley sweet and almost floral.  If you work with those flavors properly, you can make beets taste great.   Roasting beets is one way to bring out their sweetness, like in today’s recipe, roasted beet and chickpea salad. Homemade Red Wine Vinaigrette

Homemade Red Wine Vinaigrette by Alison's AllspiceThis homemade red wine vinaigrette is my go-to dressing for salads.  It only requires 5 ingredients, so it is really easy to keep everything you  need on hand.

I prefer my vinaigrettes to be very strong, and I wrote the recipe how I make it.  Traditionally, more olive oil is used which will reduce the vinegar-y-ness of the dressing.   Make it how you like it. Continue reading

Greek Chickpea Salad

Greek Chickpea Salad by Alison's AllspiceFriends, it has been a very busy summer for me, and I hope you all have a summer full of great recipes so far. This recipe, Greek chickpea salad, is one that I have been eating a lot this summer.

This salad is very easy to make.  It requires a little bit of time to chop all the vegetables, but it is totally worth it.  The flavor of all the vegetables go together perfectly, and the dressing is the icing on the cake! Continue reading

Homemade Croutons

Homemade Croutons by Alison's AllspiceOne of my favorite things to order at a restaurant is a salad.  They always have toppings and dressings that make you want to crush that bowl of veggies in front of you.  During covid, I have been craving salads at home.  Therefore I started making my own homemade croutons.

These homemade croutons do not disappoint.  They are loaded with flavor but, the biggest difference in making them homemade is the freshness.  That right-out-of-the-oven savoriness that you cannot beat. Continue reading
