Chinese Mustard Baked Tofu Sandwiches by Alison's AllspiceIt’s redux time again!  This month’s theme was: Grab your nearest cookbook and ReDux the recipe on page 201, 17, 217 – or any combination of the number ‘2017.’   I chose to redux Chinese Mustard Baked Tofu Sandwiches from the Moosewood cookbook.

I don’t have a large collection of cookbooks, but I do love the moosewood cookbook. The recipe I chose was from page 120 for a grilled Chinese mustard sandwich with sauted peppers and onions.  Continue reading

Quick Cilantro Garlic Seared Shrimp

Quick Cilantro Garlic Seared Shrimp by Alison's AllspiceYou know, I have really been on a cilantro kick recently!  I didn’t always like cilantro,  however.  I found it to be an incredibly over-powering flavor and never used it in my dishes.  It’s funny how tastes change, though.  I tried cilantro on this jalapeno tomato and cilantro pizza and couldn’t get enough.  I started trying it on other things, like cilantro lime black bean salad, and this weeks sweet potato salad.  Needless to say, I’m hooked!  This recipe, quick cilantro garlic seared shrimp is a weeknight favorite because shrimp cook in a flash! Sweet Potato Black Bean Cilantro Salad

Sweet Potato Black Bean Cilantro Salad by Alison's AllspiceOne ingredient I always keep in my fridge for easy nutritious meals is sweet potato.  I like to dice them into small pieces and either roast in the oven, or fry in a skillet.  They can stand alone as a side, or be tossed into salads, soups, stews and bowls.  This sweet potato black bean cilantro salad is my favorite way to use sweet potatoes. Black beans add plenty of protein to help you stay full, and cilantro adds plenty of fresh, bright flavor!  Eat a large serving as a main dish, or a small serving as a side. Continue reading

Five Minute Four Ingredient Homemade Gravy

Five Minute Four Ingredient Homemade Gravy by Alison's AllspiceFriends, I hope you didn’t over do it on the mashed potatoes and gravy over thanksgiving because I have a fantastic recipe for you.  This five minute four ingredient homemade gravy is so savory, and can be adapted for many diets.  It is made with broth or stock and can be made vegan, vegetarian, or omnivore!  Whatever broth you use will be the type of gravy you will have.  My mom always made gravy from drippings off a cut of meat, but there is not need for that with this recipe.  You can still enjoy a homemade gravy without needing to roast a whole bird, which makes it great for serving to a small crowd, or serving vegetarian gravy that everyone will enjoy! Holiday Butternut Pecan Salad with Berry Vinaigrette

Holiday Butternut Pecan Salad with Berry Vinaigrette by Alison's AllspiceIn early September, I visited a small Italian cafe for lunch.  They had a pumpkin ravioli and butternut squash salad on special that I tried and loved!  The salad came topped with cold ravioli, and a mixed berry vinaigrette on the side.  I loved all the fall flavors, and the colors reminded me of the holidays.  This months recipe redux theme was to create “naturally-colored/naturally-dyed holiday fare.”  When I recreated this holiday butternut pecan salad with berry vinaigrette, I knew it was perfect for the redux! Fried Avocado Black Bean Tacos

Fried Avocado Black Bean Tacos by Alison's AllspiceAvocado’s have been a little pricey here recently.  I have a serious love for avocados, so when I saw them on sale last week, I couldn’t resist!  I am usually good about not buying things I don’t have a plan for (because if I don’t have a plan, they don’t get used).  Therefore, I set out to make a plan for the avo’s I had brought home.  I had some leftover tortillas, so tacos were the obvious choice.  When I googled avocado tacos, I couldn’t believe that I had never heard of this deliciousness!  Fried avocado black bean tacos are my favorite new way to enjoy my beloved avocado! Creamy Spinach Artichoke Quesadillas

Creamy Spinach Artichoke Quesadillas by Alison's AllspiceThis week has been a very busy week for me (stories to come!), and has left me with little time to do my usual menu planning.  When dinner time came around the other night, I was scrounging through the fridge trying to come up with a plan.  I always start by looking at what vegetables I have, because I try to center my eating habits around getting plenty of veggies.  When I realized the best combo I had was spinach and artichoke, all I needed was cheese and a delivery system to make a meal.  I used my leftover spinach tortillas from my Zombie Burritos recipe to make these creamy spinach artichoke quesadillas!
