I started experimenting with kimchi as an ingredient long ago. So far, my favorite way to eat it is in fried rice. This vegan kimchi fried rice with edamame is a colorful dish that is super easy to make!

October is finally here, and the garden is starting to wind down. It’s that time of year when I have more cherry tomatoes than I know what to do with! This year I experimented with this cherry tomato pasta puttanesca.
Puttanesca is known as the poor man meal in early Italy. It has simple ingredients that bring in big flavors. Canned tomatoes are more traditional, but I gave this simple Italian dish a fresh spin by using garden fresh cherry tomatoes. Continue reading

One of the vegetables that I always have in my fridge is red cabbage. It can add crunch and color to almost any dish, even as a simple side like this feta and herb coleslaw.

This one skillet meal screams summer with all its fresh ingredients! My favorite part of this mediterranean chickpea zucchini skillet? The wine sauce! It ties the whole dish together.

Whenever I get hungry in the middle of the afternoon, I reach for one of these high protein chocolate chunk muffins! They feel like a treat, while also filling me up and helping me to snack less!
Usually when I get hungry before dinnertime, its because I needed a little extra protein. Have you tried Korean BBQ, or gochujang sauce yet? In these Korean BBQ tempeh wraps, the spicy gochujang is balanced by cool cucumber and creamy mayo.
Gochujang sauce is spicy, which is one reason I love it. If you (or a member of your family) don’t like spicy, try using regular BBQ sauce in the skillet and personalize each wrap with spicy Korean or sweet American BBQ sauce. Continue reading

This cold dinner idea is perfect for summer. We enjoyed this cold cucumber crab noodle bowl after mowing the lawn. It filled us up without heating us up, and it only required 2 1/2 minutes of cooking!
The serving size on these bowls is on the large size. I used this meal as post-work out dinner, so lots of carbs and protein were appreciated. However, the recipe as written could be split into 3 servings for a lighter meal. Continue reading

This summer, time has not been on my side. I always seem to have less than I need (or want) to get things done. I have been eating these easy hummus and pickled pepper wraps for lunches because I can literally make them in 2 minutes.

This fresh-from-the-garden cucumber dill quinoa salad with chickpeas is light and refreshing, but also filling. The chickpeas and quinoa and loaded with protein to help sustain you all day long.
I love a simple red wine vinaigrette on most of my salads. They are so easy to make and add huge amounts of flavor. Quinoa will soak up the dressing, so if you are making a large batch and plan to have leftovers (say, work lunches), store the dressing separately. Continue reading
