Roasted Root Vegetables with Parmesan Wheat Berries

Root Vegetables plus Brussle Sprout

Roasted root vegetables are a wonderful staple of the season.  Enjoy as many root vegetables as you can now, because soon spring and summer produce will be back.  I added one vegetable to this mix that is not a root vegetable: Brussels sprouts!  It is also a seasonal veggie, that grows best in colder temperatures, and I couldn’t make this dish without something green! Lentil and Bulgar Sloppy Joes

Sloppy Joes with Blugar and Lentils

Every time I am in the store and see all the pre-made packages of food, I say to myself, I can make that!  No package necessary.  This was my inspiration to make sloppy joes.  I did not grow up eating sloppy joes, probably because I was too picky of an eater as a kid!  Someone should have told me how fun they are to eat! Bok Choy and Mushroom Soup

The farmer’s market here is finally over.  Finally seams inappropriate because I will miss it so greatly until April rolls around.  Saturday mornings in the spring are like Christmas for me.  What surprises will there be? What will I not be able to go home without after its first appearance at the market? For this soup, I let the lingering fall produce make my selections.  Bok choy was only $1.00!  I coudn’t leave it behind, and hence this soup was born.

Greek Wheat Berry Salad

Greek is one of my favorite salad types.  Greek salads always include bold flavors and lots of color!  This salad is perfect for the summertime using fresh and widely available produce, like cucumbers and tomatoes.  I like to make a big batch to take to work all week long.  Everyone is jealous at lunch time when I open up my mug!

Homemade Sushi with Smoked Trout

The first time I had sushi was in Sydney Australia when I took my study abroad trip in college.  I was uncertain about the idea of eating raw fish… Will it taste weird? Will the texture be off putting?  As it turns out, sushi and I must have been long lost friends!  I loved the flavor explosion.  In a roll, the majority of the texture comes from the rice and veggies.  The rice is seasoned and sauces are used to add flare and flavor.  If you have never tried sushi I highly recommend it.  Most restaurants have varieties that use cooked fish and seafood if the raw aspect sends you screaming.A_DSC_7496

Red Beans and Rice

I love spicy food!  Cajun flavors are always a favorite, but they rarely come vegetarian.  I have adapted this red beans and rice recipe to include all the spicy and smokey flavors, without the associated sausage.

This recipe is made in the slow cooker, making it a summertime favorite.  When standing around the hot stove or oven isn’t cutting it anymore, break out the slow cooker!  I have a small slow cooker (1.5 quarts), which is perfect for two people.  You can double the recipe for a larger slow cooker and have enough for a crowd!
