Jamaican Jerk Plantain Veggie Burgers with Guacamole

Jamaican Jerk Plantain Veggie Burgers by Alison's AllspiceEver since my trip to Puerto Rico in 2014, I have been in love with plantains.  While there, I had tostones with a garlic vinaigrette that were fantastic.  Someday I will share my recreation of that recipe too. This is only the second recipe I have shared on the blog using plantains.  The first was my plantain black bean rice bowls with cilantro pesto.  This time a transformed the plantain into veggie burgers. These Jamaican jerk plantain veggie burgers are loaded with flavor. Continue reading

Southwest Twice Baked Potatoes

Southwest Twice Baked Potatoes by Alison's AllspiceWith fall in the air, I know the holidays are right around the corner.  I’m no where near ready yet, but fear not, there is still plenty of time.  When all the family gets around the dinner table, there are always multiple diets to plan for.  One easy thing to do is to have a wide variety of dishes available, and plan for leftovers.  When there are only a few people dinning, my go to meal is to stuff vegetables.  This is my favorite stuffed vegetable recipe, southwest twice baked potatoes. Cilantro Lime Sweet Potato Black Bean Tacos

Cilantro Lime Sweet Potato Black Bean Tacos by Alison's AllspiceThis fall has been unseasonably cool for us here in southern Illinois.  I have been enjoying the cool temps, and hoping for a long fall.  My slippers and sweatshirts have been dusted off and are getting some use, especially in the mornings.  The cats love to sit in the windows and have been enjoying this early fall as well.  I am usually one that takes a long time to get into the swing of fall, but I am already craving warm comfort foods.  These cilantro lime sweet potato black bean tacos are hearty and filling, while staying fresh and light! Heirloom Cherry Tomato Balsamic Jam

Heirloom Cherry Tomato Balsamic Jam by Alison's AllspiceI started most of my garden plants from seed this year.  The cherry tomatoes have been the most interesting to see mature.  They were an heirloom variety, but for some reason I expected that they would still be cherry red.  If have two plants, one produces purple tomatoes, and the other gold!  Surprise!  The tomatoes have still been a delicious treat this summer, and I especially love them in this heirloom cherry tomato balsamic jam! Spicy Hummus and Veggie Stuffed Peppers

Spicy Hummus and Veggie Stuffed Peppers by Alison's AllspiceI am always so tempted by all the produce at the farmers market during the summer.  I want to take it all home, but I couldn’t possibly eat it all!  At least I get to go back every weekend to reload for the coming week.  Last week I bought a big box of red bell peppers and I really didn’t need them all.  To use the the pepper I made spicy hummus and veggie stuffed peppers! Slow Cooker Sweet Potato Paneer Curry

Slow Cooker Sweet Potato Paneer Curry by Alison's AllspiceI have a love hate relationship with curry.  On one hand, I absolutely love it.  It’s versatile, healthy and easy to make.  However, I don’t like most curry powders I have tried, taking curry from love to hate.  Instead, I make my own curry powder.  It requires stocking lots of spices to make my own blend.  The plus side is that I can vary the amount of each spice every time I make a batch so that the flavors vary each time.  No one curry dish will be the same as the next in my kitchen!  Check out my slow cooker sweet potato paneer curry where I tried using more whole spices! Five Spice Shrimp Tacos with Rhubarb Ginger Sauce

Five Spice Shrimp Tacos with Rhubarb Ginger Sauce by Alison's AllspiceHave you guys tried chinese 5-spice powder yet?  It’s been a popular up-and-coming spice for a while now, and I’m just now getting on board.  Chinese five-spice is a blend of Szechwan pepper, star anise, cinnamon, cloves, and fennel.  It has a wonderfully warming characteristic that pairs perfectly with other Asian flavors, such as ginger, and is not spicy.  My five spice shrimp tacos with rhubarb ginger sauce are an amazing twist between Asian and Mexican cuisines! Slow Cooker Italian Lentil Stuffed Zucchini Boats

Slow Cooker Italian Lentil Stuffed Zucchini Boats by Alison's AllspiceThis month’s theme for the recipe redux was to avoid heating up the kitchen by using a cool cooking appliance (ie not the oven).  I love my big slow cooker for soups, but I don’t eat many soups during summer.  The zucchini in my garden have been plentiful for a few weeks now, at one point I had a pile of 14 on my kitchen counter!  Therefore, zucchini boats were in order.  To fit in with the redux theme, I made slow cooker Italian lentil stuffed zucchini boats!
