Sweet Potato Black Bean Cilantro Salad by Alison's AllspiceOne ingredient I always keep in my fridge for easy nutritious meals is sweet potato.  I like to dice them into small pieces and either roast in the oven, or fry in a skillet.  They can stand alone as a side, or be tossed into salads, soups, stews and bowls.  This sweet potato black bean cilantro salad is my favorite way to use sweet potatoes. Holiday Butternut Pecan Salad with Berry Vinaigrette by Alison's AllspiceIn early September, I visited a small Italian cafe for lunch.  They had a pumpkin ravioli and butternut squash salad on special that I tried and loved!  The salad came topped with cold ravioli, and a mixed berry vinaigrette on the side.  I loved all the fall flavors, and the colors reminded me of the holidays.  This months recipe redux theme was to create “naturally-colored/naturally-dyed holiday fare.”  When I recreated this holiday butternut pecan salad with berry vinaigrette, I knew it was perfect for the redux! Chipotle Butternut Squash Queso by Alison's AllspiceDuring football season, I am always challenged to come up with indulgent, cheesy finger foods that have a healthy twist.  I find that trying to make a snack healthy by reducing fat or other indulgent flavors usually makes it less exciting.  Instead I focus on adding something to the dish to make it more nutritious.  I use creamy butternut squash in this queso dip to add body and color, and mix in spicy chipotles and melty cheese to make it fun!  Try my chipotle butternut squash queso for your next game day!
