Easy Butternut Squash Soup with Coconut Milk

Easy Butternut Squash Soup with Coconut Milk by Alison's AllspiceI grow butternut squash in my garden because I love the fact that they last all through fall into winter.  I used home-grown squash in this easy butternut squash soup with coconut milk, and I could not get enough!

Usually, I use yogurt or cream to make a classic butternut squash soup to amp up the creaminess,  but I didn’t have any on hand.  Coconut milk is a common ingredient in butternut squash soup, but it is usually paired with curry spcies and the like, which is not what I was looking for. Vegan Kimchi Fried Rice with Edamame

Vegan Kimchi Fried Rice with Edamame by Alison's AllspiceI started experimenting with kimchi as an ingredient long ago.  So far, my favorite way to eat it is in fried rice.  This vegan kimchi fried rice with edamame is a colorful dish that is super easy to make!

I previously posted a kimchi fried rice recipe that had a sunny side up egg on top.  This vegan version is just as good, and is a bit more colorful thanks to the red cabbage. Continue reading

Feta and Herb Coleslaw

Feta and Herb Coleslaw by Alison's AllspiceOne of the vegetables that I always have in my fridge is red cabbage.  It can add crunch and color to almost any dish, even as a simple side like this feta and herb coleslaw.

The sauce is blended up in the food processor, and you simply mix it with sliced cabbage.  This is a seriously easy side that takes almost no time or effort.  Continue reading

Mediterranean Chickpea Zucchini Skillet

Mediterranean Chickpea Zucchini Skillet by Alison's AllspiceThis one skillet meal screams summer with all its fresh ingredients!  My favorite part of this mediterranean chickpea zucchini skillet?  The wine sauce!  It ties the whole dish together.

Ok, so no duh, I love the wine sauce.  I do love wine. It’a also an important component because it keeps the skillet moist.  Mine completely absorbed (so it wasn’t very saucy) but the flavor it added was SO good! Continue reading

High Protein Chocolate Chunk Muffins

High Protein Chocolate Chunk Muffins by Alison's AllspiceWhenever I get hungry in the middle of the afternoon, I reach for one of these high protein chocolate chunk muffins!  They feel like a treat, while also filling me up and helping me to snack less!

Usually when I get hungry before dinnertime, its because I needed a little extra protein.  However, I’m one of those people that wants everthing I eat to feel special, not just I’m eating because I have to. If  you eat because you are hungry, but don’t feel satisfied with what you eat, you’re likely to keep snacking. Continue reading

Lemon Dill Zucchini Fritters with Yogurt Sauce

Lemon Dill Zucchini Fritters with Yogurt Sauce ny Alison's Allspice I ate these lemon dill zucchini fritters with yogurt sauce for dinner last week.  It was one of those nights that I just didn’t want to make anything else.  But that’s how I roll.

I’m an entree girl, very seldom do I make a main and side dish.  That’s why all my veggie burger recipes make 4, because I eat 2 for dinner!  Also, egg rolls.  I eat them as an entree as well.  It’s tasty.  Why not? Continue reading

Jerk Tofu with Green Curry Forbidden Rice

Jerk Tofu with Green Curry Forbidden Rice by Alison's AllspiceI get a lot on recipe inspiration from magazines.  Surprisingly (or not if you know me well), I like to recreate the meat dishes instead of trying the meatless recipes.  I turned a jerk chicken recipe into a jerk tofu with green curry forbidden rice recipe.

Usually, I think of green curry paste as a thai staple.  However, it goes well with jerk seasoning, as they have some similar flavors. Continue reading

Pineapple Sriracha Tempeh Tacos

Pineapple Sriracha Tempeh Tacos by Alison's AllspiceOne of my favorite tempeh recipes is my gyro tempeh tacos.  I used it as inspiration when I made these pineapple sriracha tempeh tacos.  They are fast, fresh, and perfect for summer!

The pineapple sriracha combo has a great sweet and spicy complex.  I flavored the tempeh very modestly, just so that it wouldn’t be bland, and added some crunchy cabbage as filler. Continue reading

Cucumber Dill Quinoa Salad with Chickpeas

Cucumber Dill Quinoa Salad with Chickpeas by Alison's AllspiceThis fresh-from-the-garden cucumber dill quinoa salad with chickpeas is light and refreshing, but also filling.  The chickpeas and quinoa and loaded with protein to help sustain you all day long.

I love a simple red wine vinaigrette on most of my salads.  They are so easy to make and add huge amounts of flavor. Quinoa will soak up the dressing, so if you are making a large batch and plan to have leftovers (say, work lunches), store the dressing separately. Continue reading
