Clam Linguine alla Vodka by Alison's AllspiceFor this clam linguine alla vodka recipe, I decided to mash together two classic recipes, clam linguine and pasta alla vodka.  The results are delicious.  The sweet seafood-y clams are elevated by the rich, acidic vodka sauce.

I prefer chopped clams to whole clams for this recipe because they are packed in flavorful clam juice that you can use to thin the sauce.  I also found whole clams to be gritty in comparison, requiring a rinse that takes away some flavor.  As always, use what you like. Continue reading

Smoky Trout Tacos with Lemon Garlic Aioli by Alison's AllspiceI don’t think there is such a thing as a perfect fish taco.  It can’t be because there are just so many good ways to do it, no one recipe could ever be the best.  Nevertheless, I am always in the pursuit of perfecting recipes and fish tacos are easily a food group in my house, so here is another variation for you to try: smoky trout tacos with lemon garlic aioli.

Can we talk about aioli for a minute, please?  Does anyone actually use eggs to make their aioli?  Maybe I’m the only one that is totally hooked on the ease of using mayo, but what can I say?  It’s delicious, easy to make, and I don’t have to fuss with raw eggs.  Win-win in my book. Easy Garlic Roasted Salmon by Alison's AllspiceThis easy garlic roasted salmon recipe is so simple, and yet is my favorite way to make salmon.  It really lets the flavor of a quality salmon shine instead of overpowering it with seasonings and glazes.

That being said, you can mix it up by stirring in additional toppings.  Try ¼ tsp red pepper flake for a spicy version.  Try 1 tsp fresh minced rosemary for an herbed version. Mix in 1 tsp honey for a sweetened version. Continue reading

Fire Up Jellies and Jams have numerous great products in their line, but I know I wanted to use their Strawberry Habanero Jelly to glaze these burgers.  It has the best sweet heat flavor that works universally with many ingredients, such as the fishy flavor of salmon. Continue reading

Smoked Trout Melts

Smoked Trout Melts by Alison's AllspiceCalling all trout fishermen and fisherwomen!  I have taken the classic tuna melt, and transformed it into a trout fishermans dreams, smoked trout melts.  It is ultra creamy, while still slightly smokey and sweet, and it’s ready for dinner in only 15 minutes!

I love to spend a whole day pulling out the smoker and loading it with trout and my homemade smoked tofu recipe, along with whatever else suits my fancy.  Smoked trout is a true delicacy, and I always make enough for plenty of leftovers! Continue reading

Salmon and Potato Au Gratin by Alison's Allspice My husband and I celebrated our first dating anniversary (many moons ago) at this little Scandinavian café at a vineyard that had a limited menu.  We both adore fish and tried the fish au gratin and fell in love with the dish!  Today I make salmon and potato au gratin at home for special occasions.

Au gratin is a special occasion dish as it is very rich, loaded with milk and cheese.  It is perfect for indulgent meals that you want to celebrate, including the holidays!  I have made it with both 2% milk and whole milk, and both work, but the whole milk is just a bit richer. Continue reading

Cherry Tomato Shrimp and Grits

Cherry Tomato Shrimp and Grits by Alison's AllspiceShrimp and grits is one of the classic southern dishes that can be made so many different ways that no two recipes are alike.  I always try to add some vegetables for good measure, and these cherry tomato shrimp and grits are by far my favorite!
