Tempeh Gyro Tacos with Cucumber Salsa

Tempeh Gyro Tacos with Cucumber Salsa by Alison's AllspiceIt’s official, I’m obsessed with all things gyro!  I absolutely love the explosion of flavors, especially the tzatziki.  I remember the first gyro I ever had at a sandwich shop in college.  The sandwich maker asked if I wanted to add the tzatziki, and I didn’t know what it was at the time.  He explained that it’s a creamy sauce that you will either love or hate.  Well,  I loved it, needless to say.  My husband loves tacos, so these tempeh gyro tacos with cucumber salsa were a success! Spicy Hummus and Veggie Stuffed Peppers

Spicy Hummus and Veggie Stuffed Peppers by Alison's AllspiceI am always so tempted by all the produce at the farmers market during the summer.  I want to take it all home, but I couldn’t possibly eat it all!  At least I get to go back every weekend to reload for the coming week.  Last week I bought a big box of red bell peppers and I really didn’t need them all.  To use the the pepper I made spicy hummus and veggie stuffed peppers! Slow Cooker Sweet Potato Paneer Curry

Slow Cooker Sweet Potato Paneer Curry by Alison's AllspiceI have a love hate relationship with curry.  On one hand, I absolutely love it.  It’s versatile, healthy and easy to make.  However, I don’t like most curry powders I have tried, taking curry from love to hate.  Instead, I make my own curry powder.  It requires stocking lots of spices to make my own blend.  The plus side is that I can vary the amount of each spice every time I make a batch so that the flavors vary each time.  No one curry dish will be the same as the next in my kitchen!  Check out my slow cooker sweet potato paneer curry where I tried using more whole spices! Slow Cooker Italian Lentil Stuffed Zucchini Boats

Slow Cooker Italian Lentil Stuffed Zucchini Boats by Alison's AllspiceThis month’s theme for the recipe redux was to avoid heating up the kitchen by using a cool cooking appliance (ie not the oven).  I love my big slow cooker for soups, but I don’t eat many soups during summer.  The zucchini in my garden have been plentiful for a few weeks now, at one point I had a pile of 14 on my kitchen counter!  Therefore, zucchini boats were in order.  To fit in with the redux theme, I made slow cooker Italian lentil stuffed zucchini boats! Gouda Grilled Cheese with Apricot Ginger Spread

Gouda Grilled Cheese with Apricot Ginger Spread by Alison's AllspiceDisclaimer:  “I received free samples of Libby’s Fruits & Vegetables mentioned in this post. By posting this recipe I am entering a recipe contest sponsored by Libby’s Fruits & Vegetables and am eligible to win prizes associated with the contest. I was not compensated for my time.”

My parents taught me how to make a grilled cheese sandwich at a very young age.  They encouraged me to cook as a kid, and maybe that’s why I enjoy it so much today – it takes me back to my youth.  Back then, my grilled cheese sandwiches were simply made with cheddar, but this Gouda grilled cheese with apricot ginger spread is a delicious adult take on the simple and convenient grilled cheese sandwich. Grilled Clam Stuffed Mushrooms with Tomato Relish

Grilled Clam Stuffed Mushrooms with Tomato Relish by Alison's AllspiceI have a gigantic collection of cooking magazines that I have collected over the years.  I’m pretty serious about my collection as well.  My magazines are filed away according to the month published.  When ever I need some recipe inspiration, or want to do some light reading I go find this months file.  I tab all my favorite ideas so they are easy to find, but sometimes I will reread the magazine and see how my tastes have changed since I first tabbed it.  Recently I did this and came across a stuffed mushroom recipe with a red pepper relish.  I couldn’t believe that I hadn’t tabbed that recipe! I instantly wrote up my own variation and dubbed it worthy of a grill out night.  And thus, grilled clam stuffed mushrooms with tomato relish was born.  Continue reading

Asparagus Artichoke White Pizza

Asparagus Artichoke White Pizza by Alison's AllspiceI first decided to put asparagus on a pizza simply because I already had some in the fridge.  It was going to be a sun-dried tomato, artichoke, and asparagus pizza.   As life goes, that didn’t happen.  I ran out of sauce, so I ended up using my sun-dried tomatoes in my Asparagus Carbonara recipe.   I hit the drawing board again and decided to try the pizza with a simple white sauce.  This Asparagus Artichoke White Pizza is even better than I had imagined, and a great way to wrap up this years Asparagus Mini-Series!
