Honey Harissa Sheet Pan Tofu

Honey Harissa Sheet Pan Tofu by Alison's AllspiceThis honey harissa sheet pan tofu has made it into our regular rotation of dinners for a lot of reasons.  The texture of the tofu is amazing, the whole thing is super easy, and you can make simple swaps for what you have on hand.

Have you tried ripping tofu by hand?  It creates lots of edges that all get crispy when baked with starch and yields some of the crispiest tofu.  On top of that, it is kind-of fun and easy just getting into the tofu block with your hands. Good for stress relief, or a good option for kids to help out in the kitchen. Continue reading

Cherry Tomato Chickpea and Shrimp Sheet Pan Dinner

Cherry Tomato Chickpea and Shrimp Sheet Pan Dinner by Alison's AllspiceThe end of tomato season is just about here for my garden, which means that now is the time that my tomatoes are the most abundant.  We put this cherry tomato chickpea and shrimp sheet pan dinner on the rotation several times before I got it just right.

First, I tried the recipe without the shrimp for a vegetarian version and I felt like it was missing some texture.  I pondered for days about what vegetable to add before I decided to try shrimp instead. Continue reading

Easy Garlic Roasted Salmon

Easy Garlic Roasted Salmon by Alison's AllspiceThis easy garlic roasted salmon recipe is so simple, and yet is my favorite way to make salmon.  It really lets the flavor of a quality salmon shine instead of overpowering it with seasonings and glazes.

That being said, you can mix it up by stirring in additional toppings.  Try ¼ tsp red pepper flake for a spicy version.  Try 1 tsp fresh minced rosemary for an herbed version. Mix in 1 tsp honey for a sweetened version. Continue reading

Cherry Tomato Shrimp and Grits

Cherry Tomato Shrimp and Grits by Alison's AllspiceShrimp and grits is one of the classic southern dishes that can be made so many different ways that no two recipes are alike.  I always try to add some vegetables for good measure, and these cherry tomato shrimp and grits are by far my favorite!

I have also tried shrimp and grits with mushrooms and with red bell pepper.  Both were delicious in their own right, but the sweet cherry tomatoes really compliment the sweetness of the shrimp and the sweetness of the corn. Continue reading

Miso Mushroom Lentil Shepherd’s Pie

Miso Mushroom Lentil Shepherd's Pie by Alison's AllspiceI have a mushroom miso pasta bake recipe that I adore.  The umami flavors of both mushrooms and miso simply work together.  Mushroom shepherds pie is a family favorite and one day it just clicked – I have to give it a miso makeover!  Try my miso mushroom lentil shepherd’s pie for a new spin on the classic.

I added lentils to my family’s mushroom sheperds pie recipe because I wanted this recipe to have more protein.  Sometimes recipes that are all vegetable (like mushrooms and potato) leave me feeling hungry!  Continue reading

Whole Wheat Deep Dish Pizza Dough

Whole Wheat Deep Dish Pizza Dough by Alison's AllspiceI hope you guys are ready for a break from holiday recipes and ready to dive into some pizza!  If you are enjoying time with family this year, pizza is sure to be a hit, and I recommend this whole wheat deep dish pizza dough recipe.

I prefer to have a whole wheat crust on pizza.  Let me explain why.  When you are trying to make a recipe healthier, it is hard to remove tasty ingredients and end up with something you love just as much. Continue reading

Lasagna Stuffed Mushrooms

Lasagna Stuffed Mushrooms by Alison's AllspiceI love lasagna, but I don’t make it often because it takes so long to make.  Well, these lasagna stuffed mushrooms have many positive qualities of lasagna, while taking much less time to make!

During summer, I like to cook these mushrooms on the grill instead of heating up the oven.  When the temperature starts to drop, like now, I enjoy having the heat of the oven in the house.  In short, either cooking method works. Continue reading

Feta and Dill Crusted Trout

Feta and Dill Crusted Trout by Alison's AllspiceIn the recent months I have been cleaning out the freezer.  Therefore, I have been eating a lot of trout, and loving every bite!  I adapted this feta and dill crusted trout recipe from another favorite trout recipe, Dijon crusted trout.

Adding a crunchy topping to fish makes it feel like something else entirely.  I guess thats why fish sticks were/are so common.  If you don’t care for the texture of fish, try it topped with panko and seasonings! Continue reading

Mushroom Lentil Enchiladas

Mushroom Lentil Enchiladas by Alison's AllspiceThis is hands down my favorite enchilada recipe.  When I make enchiladas, I don’t bother with other recipes because this mushroom lentil enchiladas recipe is the best! The caramalized swiss cheese is enough to make me swoon!

I have posted a similar recipe before (find it here), but I have improved upon it by adding some subtle spices that round out the earthiness of the mushrooms and lentils. Seriously guys.  Best. Enchiladas. EVER! Continue reading

Baked Mushroom Lentil Empanadas

Baked Mushroom Lentil Empanadas by Alison's AllspiceA looooooooong time ago, I made these mushroom pecan empanadas and shared them on the blog.  This was early in my journey of plant-based eating, and I have decided to re-do the recipe.  Today, we will check out my new baked mushroom lentil empanadas recipe!

Pecans were an unusually but tasty protein source for empanadas. I decided to use lentils instead because they make the fillig more moist, and a better protein to calorie ratio. I also swapped whole wheat pastry flour for the white whole wheat flour because I could use more of it and still achieve the desired texture.  Yay for whole grains! Continue reading
