Do you guys ever have those days when you dropped the ball and don’t have a plan for lunch? Whenever I find myself in need of a quick meal, I turn to toast! This buffalo blue cheese smashed chickpea toast is my favorite!
Avocado toast has been all the craze recently. I never really got on board because, well, I didn’t consider toast to be a meal. When you top it with hearty and filling protein, like smashed chickpeas, why not?
I often times see recipes for chickpea salad sandwiches, but I have to say, toast is better for two reasons. Number one. Texture. The crispy toast adds crunch.
So why not use toast to make a sandwich? This leads me to number two. The top layer of bread smooshes the sandwich filling out while you eat! Hence, an open-faced slice of toast is the best way to go!
Tips and tricks for the Buffalo Blue Cheese Smashed Chickpea Toast recipe:
- I have tried many different types of cheese in this recipe based on what I had available. Blue cheese is best, cheddar is my second favorite, and feta is my third. I didn’t like cream cheese or mozzarella, FYI.
- I tried adding salt and pepper because they are basic seasonings, right?! Well the hot sauce has all the salt and pepper you need. They are unnecessary!
- If you want to serve this and make it look fancy, add sliced green onions. If eat them without most of the time for simplicity.
- 2 slices whole wheat bread
- ½ cup cooked chickpeas (from a can)
- 2 TBS quality blue cheese, crumbled
- 1½ TBS hot sauce (such as franks)
- Pinch garlic granules or powder
- Toast the bread until golden brown and crispy in a toaster.
- Meanwhile, coarsley smash chickpeas with a fork or avocado masher. Mix in blue cheese, hot sauce, and garlic granules.
- Heat in the microwave for 10-20 seconds, just enough to get the cheese a little metly.
- Spread onto the toast. Garnish with a drizzle of hot sauce, and a few crumbles of blue cheese if desired.
