15 Asparagus Recipes by Alison's AllspiceIn spring I usually like to post 2-3 asparagus recipes because it is one of my favorite vegetables and the window when it is in season always feels so short!  This year I decided to look back on some favorite recipes, including these 15 asparagus recipes.

I post vegan, vegetarian, and pescetarian recipes, and all three are represented in this recipe roundup.  The list starts with the vegan recipes and ends with the seafood recipes.

Asparagus and Corn Salad – This vegan recipe is a true classic.  Making asparagus and corn salad is quick and delicious. It has become my go-to asparagus side dish because it is so easy without lacking in flavor!

Pan Seared Potato Gnocchi with Asparagus and Mushrooms – This gnocchi dish is made with a simple miso pan sauce. The gnocchi are tender on the inside and chewy on the outside, and the sauce is rich with umami!  To make this recipe vegan, simply omit the parmesan cheese.

Sesame Soba Noodles with Asparagus and Tofu – This recipe is easy, even for beginners. It is one that I made often as a young novice cook. Soba noodles are worth seeking out for this recipe!

Roasted Cherry Tomato and Asparagus Pasta – Cherry tomatoes are among the sweetest tomatoes.  Roasting them concentrates and caramelizes that sweet juicy flavor. For a spring-time dinner, I roasted asparagus right along with cherry tomatoes in the oven to make this vegan roasted cherry tomato and asparagus pasta dinner!

Roasted Asparagus with Creamy Dill Sauce – This will become your favorite side dish in no time. It is quick and simple with many applications for the creamy savory sauce! Try it with fresh or dried dill.

Asparagus Snap Pea Pasta Salad – This asparagus snap pea pasta salad is dressed with a homemade Dijon vinaigrette that is bright and flavorful! It can be served as a side dish or a light meal!

Goat Cheese Artichoke Pasta with Asparagus – Tangy goat cheese is the star of this dish, pairing well with veggies and pasta. Try this recipe for a quick and healthy weeknight dinner!

Lemon Butter Asparagus Ravioli – This recipe is seriously simple, and absolutely delicious!  Boil ravioli, chop asparagus and garlic, squeeze lemon, and melt butter, dinner’s ready!

Asparagus Feta Omelet – Whether you love eggs for breakfast or dinner, you will enjoy this asparagus feta omelet. Make a single serving in an 8-inch skillet. Repeat if you want a second for yourself or a friend!

Asparagus Mushroom Potato Hash – Get your veggies with breakfast when you make this asparagus mushroom potato hash recipe! It is perfect for brunch, and reheats well for weekday breakfast!
