This months recipe redux theme is Kids that Cook. The thing I remember cooking most as a child was tortillas. Mom would make a fresh batch every time we had tacos, and it was my job to flip them in the skillet. These vegetarian taco lunch wraps remind me of those tacos nights as a kid!
I didn’t like to have much in my tacos as a kid. Plain tacos was always my request. We always had homemade refried beans to go with our homemade tortillas, and I created this taco lunch wrap based on those 2 ingredients.
To make this wrap, start with a tortilla, and load it up with refried beans. Top with cheese, salsa, and lettuce, wrap it up, and enjoy!
If you want to make these for a take along lunch, serve the salsa on the side. Otherwise it can make the wrap get wet and mushy before lunch time.
Variations to the Vegetarian Taco Lunch Wraps recipe:
- I liked plain tacos as a kid, and using few ingredients keeps this recipe simple. You can always load it up with whatever veggies you have on hand as well!
- Try making your own homemade refried beans and homemade tortillas. Both are easy recipes that your kids can help you cook if you have the time. I flipped the tortillas in the skillet when I was a kid.
- Some mushroom lentil taco crumbles would be a great addition to this wrap for even more taco flavor!
- 2 medium tortillas (8 inches, or the taco size)
- ½ cup refried beans
- ¼ cup shredded cheese (such as cheddar)
- ¼ cup red salsa
- 2 cups chopped romaine lettuce
- Spread refried beans over each tortilla.
- Top with shredded cheese, salsa, and lettuce. (Note: serve salsa on the side if you want a to-go lunch for later!)
- Roll up into a wrap, or eat taco style!
